Some dolmades recipes have been altered from their traditional state. This dolmades recipe is designed to include ingredients that lower cholesterol.
Chicken Dolmades
Ingredients
2 cups of brown rice 500 g ground lamb or ground chicken 1/2 cup finely chopped shallots 1/4 cup currants 1/4 cup pine nuts or chopped almonds 2 tablespoons finely chopped fresh parsley 2 tablespoons olive or canola oil - use olive if you can afford it. 500 g grape leaves 1/4 cup lemon juice 300 ml beef broth 1 cup water
Method:
Place rice in unsalted water and cook until water has been absorbed, remove from heat. Cook the meat on medium to high heat until breaking into small pieces, then mix coarsely with the rice shallots, currants, nuts, salt, parsley and olive oil in a large bowl. Remove the stems from the grape leaves and wash thoroughly. Place small amounts of meat mixture on a grape leaf and fold into rolls. Repeat the process until all the mixture is gone. Arrange the rolls seam side down in a saucepan and sprinkle a small amount of lemon juice as you go, then when finished, pour any remaining lemon juice, beef broth and water over the rolls. Cover and cook on low heat for about an hour. Remove from the heat and allow to cool. Drain excess liquid and serve hot or cold.
Recipe makes 40 to 50 dolmades.

There are a myriad of other dolmades recipes out there on the net, just take a look at the few I found. Some of them may have ingredients which are not cholesterol lowering, you just need to substitute ingredients that are e.g. leave out the salt, use brown rice instead of white rice. I have chosen recipes I felt were in keeping with cholesterol lowering ingredients.
