Granola Bar



Pear and Apple Granola Bar

Ingredients:

8 oz (1 cup) rice puffs
1 1/4 oz (50 g) linseed
4 oz (1/2 cup) sunflower kernels
1 1/4 oz (50 g) chopped macadamia nuts
4 oz (1/2 cup) quick oats
1 1/4 oz (50 g) dried mango
3 1/4 oz (100g) dried apple
6 medium sized dried figs
1 1/4 oz (50 g) dates
2 handfuls of sultanas
8 oz (1 cup) whole meal flour
1 tblspn water
1 tspn corn flour
3/4 tblspn flaxseed oil
1/4 - 1/2 cup pear juice
2 tblspns honey / golden syrup
2 tblspns low fat natural yogurt

The important thing to realize with this recipe is that you don't bake it. One of the reasons for this is that it includes flaxseed oil. Flaxseed oil is high in omega 3 fatty acids and the best way to kill these essential fatty acids off is to heat it - so whatever you do, don't bake this granola bar.

Method:

Mix corn flour and water until combined. Add whole meal flour, pear juice and heat in a saucepan until mixture thickens. Allow mixture to cool and add honey or golden syrup whichever you prefer, the low fat natural yogurt, and lastly the flaxseed oil.

This will form the base of your granola bar recipes. You can change the other ingredients of your granola bar, but keep these the same.

Mix the dried fruit and nuts together and then add them to your base.

Line a slice tin with baking paper and press your granola bar mixture into the tin. Refrigerate for two hours before removing and slicing into bar sized portions.

Pack in an air-tight container and refrigerate.

Makes: approximately 16 bars.

This particular recipe listed below uses wholemeal flour for increased fiber, flaxseed oil to include Omega 3's and low fat natural yogurt as an increased source of protein.

Often you will find that home made granola bars contain a lot of butter/margarine to bind the grains and dried fruit and have added sugar ! Because of this I've tried to steer away from added sugar and bad fats.

Granola bars offer you the perfect snack before a ride, after a gym workout or at the office.
