Low Fat Cake Recipe - Chocolate Jam - No Less

Yummy and only 1.96g of fat per serving !

This chocolate jam low fat cake recipe has been designed to have next to no cholesterol, is low in fat and has only 113 calories per cake.

Even though this cake has a relatively low amount of calories and is low in fat, it still should be regarded as belonging to the discretionary category.

If you are one to think (a habit of mine, I'm afraid) that you can eat twice as much, if it only has half the calories, then you might want to consider making a conscious effort to make only one cake at a time for yourself, or only as much as you need.

I've included ingredient amounts to make 1 cake only below.

Having said this, when you've got diet food that tastes this good, being on a diet and having friends over for afternoon tea, won't seem so bad.

Chocolate Jam Low Fat Cake Recipe


Ingredients:

Low Fat Cake Recipe
1/2 Cup Orange Juice
2 Egg Whites
1 Tbs Honey
2 Cups Self-Rising or Self-Raising Flour
1 Tbs Sugar-free Instant Chocolate Drinking Powder
6 3/4 Tbs Low Fat or Fat-free Milk
1/4 Cup Dietetic Jam of Your Choice
1/8 cup Vanilla Low Fat Yogurt
1 1/3 Tbs Canola Oil or Use Canola Oil Spray


Method:

1 Pre-heat your oven to 200 degrees Celsius or 392 degrees Fahrenheit

2 Spray your cup cake pan with canola oil spray or use normal canola oil to coat your cup cake pan.

3 Combine the juice, egg whites and honey and mix thoroughly.

4 Add your flour, and chocolate powder to the mixture and mix thoroughly with a spoon.

5 Add milk to moisten and mix again.

6 Spoon 2 tablespoons into each cup cake. Place into the oven for 15 minutes or until the cake springs back when depressed slightly.

7 Remove the cakes from the pan.

8 Cut the top off each cake and spoon 1 tsp of jam and yogurt onto each cake and then replace the top.

9 Serve immediately.

Makes 12 cup cakes.

Cooking Tips:

For increased fiber substitute whole meal flour for normal white flour.

If you have deep cup cake pans, only spoon the amount above into each cup cake, in order that you can portion control each cake.

Use the canola spray oil if possible as the normal oil doesn't work quite as well.

Be careful not to over cook this low fat cake recipe, as they can go a little hard if over cooked. These cakes don't keep well, and so should be consumed immediately.
