Pizza Recipe With Pizazz.

Pizza Recipe: Pizza Buns

Ingredients:

6 wholegrain (not wholemeal) sandwich buns
1/2 tablespoon of olive oil
200 grams of lean mince (no fat)
1/2 small onion
1/2 small pepper or capsicum
1/2 cup low salt canned finely chopped tomato in juice
1 teaspoon of mild chilli sauce
100 grams of non-fat shredded cheese
100 grams of small mushrooms
1 tablespoon of fresh thyme leaves
100 grams of canned pineapple pieces
2 handfuls of fresh or pre-cooked shelled and peeled prawns or shrimp
2 handfuls of fresh chives

Method:

This pizza recipe is really a stuffed bun recipe, but we've put all the normal ingredients into buns to make a more filling dish. It's also a quick and easy recipe, because you don't have to make the base from scratch.

Preheat oven to moderate 180 degrees Centigrade or 356 Fahrenheit temperature.

Cut the top off the wholegrain buns and scoop out their centers. Crush or mash the centers into small pieces to make bread crumbs. Reserve the bread crumbs for later.

Heat a frying pan with 1/2 tablespoon of olive oil. Cook the mince until browned, then drain off any fat and take off the heat, transfer into a large mixing bowl.

If you bought fresh prawns or shrimp, place 1/2 tablespoon of olive oil in the frying pan and follow with the fresh prawns (shrimp), cook until the prawns are pink, take off the heat and transfer into the large mixing bowl with the mince.

Chop the mushrooms, capsicum, onion, thyme leaves and 1/2 the chives. Transfer these into the large mixing bowl with the mince and shrimp.

Add the non fat cheese cubes, pineapple pieces, tomato puree, the tomato pieces, mild chilli sauce, bread crumbs and mix thoroughly.

When you have the mixture spoon it into the buns and replace the top you cut off. Repeat for each bun. Wrap each bun in alfoil and place the buns on an oven tray.

Place the buns in the oven for 15 minutes. Remove the buns from the oven, roughly spread a small amount tomato juice on the bun lids, sprinkle the shredded cheese, the other half of the chives and lightly sprinkle with thyme on the top of the buns. Replace the buns in the oven for a further 5 - 10 minutes or until the cheese is melted.

Remove from the oven and serve hot with lettuce, fresh tomato, chives, corn and beets.

Serves 6.

This recipe is great as a filling snack or as a meal. It is also a quick meal, as you can make extra filling and freeze it down, ready for the next time you want to make pizza buns.
